Ingredients

  • – 2 lb (900g) strawberries, hulled and sliced
  • – 1 pint (473ml) blueberries
  • – 8 ounces (227g) feta cheese pearls, drained
  • – handful of fresh basil chiffonade
  • – 2 tablespoon (30 ml) honey
  • – 2 tablespoon (30 ml) balsamic vinegar
  • – ¼ cup (60ml) olive oil
  • – 1/2 teaspoon (3 ml) salt
  • – 1/4 teaspoon (1 ml) ground black pepper


Instructions

  1. Prepare by washing, removing the tops, and slicing the strawberries. Drain the feta cheese pearls. Cut the basil into thin strips.
  2. In a small mixing bowl, combine the honey, balsamic vinegar, olive oil, salt, and black pepper. Whisk together until well blended.
  3. In a large bowl, mix the strawberries, blueberries, feta cheese pearls, and basil.
  4. Drizzle the dressing over the mixture and gently toss to coat evenly. Allow the dish to rest for 15 minutes before serving.

Notes

  • Try using balsamic glaze for a tangier taste in the dressing.
