Ingredients

  • 2 lbs (900 g) cherry tomatoes
  • 1/4 cup (60 ml) vegetable oil
  • 1 1/2 tbsp (22.5 ml) apple cider vinegar
  • 2 tsp (10 ml) sugar
  • 1 tsp (5 ml) salt
  • 1/2 tsp (3 ml) freshly ground black pepper
  • 2 cloves garlic, minced


Instructions

  1. Heat your oven to 275°F and position the rack in the center. Cover a baking tray with a large sheet of heavy-duty aluminum foil.
  2. On the prepared baking tray, blend the cherry tomatoes with vegetable oil, apple cider vinegar, sugar, salt, black pepper, and minced garlic using a rubber spatula.
  3. Bake for 2 hours until the tomatoes are tender and starting to burst open. They can be enjoyed hot or at room temperature.
  4. Preparation in Advance/Freezer Advice: Store the tomatoes in an airtight container in the fridge for up to 4-5 days. They are also suitable for freezing for as long as 3 months. For freezing, consider portioning them so you can defrost only what you need.
