Ingredients
- 1 zucchini, sliced
- 1 bell pepper, chopped
- 1 red onion, cut into wedges
- 1 cup cherry tomatoes
- 1/4 cup balsamic vinegar
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- Salt and pepper to taste
Instructions
- In a bowl, whisk together balsamic vinegar, olive oil, garlic, oregano, salt, and pepper.
- Add the sliced vegetables to the marinade and toss to coat.
- Let marinate for at least 30 minutes.
- Preheat the grill to medium-high heat.
- Thread the vegetables onto skewers or place them directly on the grill.
