Description

A vibrant medley of zucchini, bell pepper, red onion, and cherry tomatoes, marinated in balsamic vinegar and grilled to perfection.


Ingredients

  • 1 zucchini, sliced
  • 1 bell pepper, chopped
  • 1 red onion, cut into wedges
  • 1 cup cherry tomatoes
  • 1/4 cup balsamic vinegar
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • Salt and pepper to taste


Instructions

  1. In a bowl, whisk together balsamic vinegar, olive oil, garlic, oregano, salt, and pepper.
  2. Add the sliced vegetables to the marinade and toss to coat.
  3. Let marinate for at least 30 minutes.
  4. Preheat the grill to medium-high heat.
