Ingredients

  • – 2 cups (470 ml) zucchini
  • – 2 cups (470 ml) bell peppers, any color
  • – 1 cup (235 ml) Brussel sprouts
  • – 1 cup (235 ml) portabella cap
  • – 1 cup (235 ml) broccoli
  • – 1/2 teaspoon (3 ml) salt
  • – 1/4 cup (60 ml) olive oil
  • – 2 tablespoons (30 ml) maple syrup
  • – 2 tablespoons (30 ml) balsamic vinegar
  • – 1/2 teaspoon (3 ml) salt
  • – 1/4 teaspoon (1 ml) garlic powder

Instructions

  1. Set your oven to a temperature of 400° F (200° C).
  2. Clean and chop up a total of 8 cups of the vegetables you wish to roast.
  3. Place all the chopped veggies in a large 9 x 13-inch baking dish, similar to one used for lasagna.
  4. In a small bowl, combine the olive oil, balsamic vinegar, maple syrup, and garlic powder, then drizzle this mixture over the vegetables.
  5. Ensure the vegetables are thoroughly coated by mixing them well with the dressing.
  6. Roast in the oven at 400° F for 45 minutes, stirring the vegetables every 15 minutes to ensure even cooking.
  7. Serve alongside rice, mixed into pasta, or as an accompaniment to your meal.

Notes

  • Consider enhancing the caramelized flavor by adding a touch of brown sugar to the vegetable mix before roasting.
  • Experiment with various seasonings like rosemary, thyme, or paprika to tailor the taste to your liking.
  • Boost the protein content by including chickpeas or cubed tofu with the veggies before roasting.
