Ingredients

  • – 1/4 cup (60 ml) vegetable oil
  • – 3 tablespoons (45 ml) balsamic glaze, store-bought is fine
  • – 1 tablespoon (15 ml) tomato paste
  • – 1 teaspoon (5 ml) honey
  • – Juice of 1 lemon
  • – 4 to 5 large garlic cloves, minced
  • – 1 tablespoon (15 ml) fresh thyme
  • – 1 teaspoon (5 ml) dried oregano
  • – 1/2 teaspoon (3 ml) sweet paprika
  • – 8 boneless and skinless chicken thighs, (about 1 1/2 pounds (680 g))
  • – Salt and black pepper


Instructions

  1. In a large bowl, combine the vegetable oil, balsamic glaze, tomato paste, honey, and lemon juice, whisking them together.
  2. Incorporate the minced garlic, fresh thyme, dried oregano, and sweet paprika into the mixture, and whisk again until blended.
  3. Thoroughly dry the chicken and season it liberally with salt and black pepper on both sides.
  4. Place the chicken into the bowl and turn it over to ensure it is well coated with the marinade. Allow it to rest briefly while you preheat the oven, or if time allows, cover and refrigerate for a few hours.
  5. Preheat the oven to 425 degrees F and position the rack in the middle.
  6. Move the chicken to a baking dish or oven-safe skillet. Cook it on the center rack of the preheated oven for 25 to 30 minutes, or until it reaches an internal temperature of 165 degrees F and is fully cooked.
