Ingredients

  • 4 large tomatoes (800g)
  • 1/2 teaspoon (3 ml) Italian seasoning
  • Salt, to taste
  • Black pepper, to taste
  • 1/4 cup freshly shredded plant-based Parmesan cheese (30g)
  • 3/4 cup shredded plant-based mozzarella cheese (75g)
  • Vegetable oil
  • Fresh basil


Instructions

  1. Set your oven to 400°F to preheat.
  2. Cut the tomatoes into thick rounds, approximately ½-inch thick.
  3. Arrange the tomato slices in a single layer on a large baking tray that has been lined with parchment paper. Sprinkle them with salt, pepper, and Italian seasoning for flavor.
  4. Sprinkle a layer of freshly shredded Parmesan cheese onto each tomato slice.
  5. Follow up by adding the mozzarella cheese on top.
  6. Lightly drizzle a bit of vegetable oil over each tomato.
  7. Place in the oven and bake for 8 to 10 minutes, or until the cheese is melted. Afterward, broil for an additional 1-2 minutes until the top turns golden brown.
