Ingredients
- 4 large tomatoes (800g)
- 1/2 teaspoon (3 ml) Italian seasoning
- Salt, to taste
- Black pepper, to taste
- 1/4 cup freshly shredded plant-based Parmesan cheese (30g)
- 3/4 cup shredded plant-based mozzarella cheese (75g)
- Vegetable oil
- Fresh basil
Instructions
- Set your oven to 400°F to preheat.
- Cut the tomatoes into thick rounds, approximately ½-inch thick.
- Arrange the tomato slices in a single layer on a large baking tray that has been lined with parchment paper. Sprinkle them with salt, pepper, and Italian seasoning for flavor.
- Sprinkle a layer of freshly shredded Parmesan cheese onto each tomato slice.
- Follow up by adding the mozzarella cheese on top.
- Lightly drizzle a bit of vegetable oil over each tomato.
- Place in the oven and bake for 8 to 10 minutes, or until the cheese is melted. Afterward, broil for an additional 1-2 minutes until the top turns golden brown.
