Description

A creamy and hearty baked potato soup that’s perfect for chilly evenings, made with simple ingredients that warm the soul.


Ingredients

  • 4 large baked potatoes
  • 1/2 cup butter
  • 1/2 cup all-purpose flour
  • 4 cups chicken broth
  • 2 cups milk
  • 1 cup shredded cheddar cheese
  • 1 cup sour cream
  • 1/2 cup green onions, chopped
  • Salt and pepper to taste


Instructions

  1. Scoop the baked potatoes out of their skins and place the flesh in a large pot.
  2. Melt butter in a saucepan over medium heat. Stir in the flour and cook until light brown.
  3. Gradually whisk in the chicken broth and bring to a boil.
  4. Add the milk, sour cream, and the potato flesh, stirring until smooth.
  5. Stir in the cheese and green onions, cooking until the cheese melts.
  6. Season with salt and pepper to taste.
  7. Serve hot, topped with additional cheese and green onions if desired.

Notes

For added texture, reserve some crispy bacon or croutons to sprinkle atop each serving.
