Ingredients
- 5 pounds (680 g) boneless skinless chicken thighs
- 1/2 cup (120 ml) plain Greek yogurt full fat preferred
- 1/4 cup (60 ml) olive oil
- Zest of one lemon
- 1/3 cup (80 ml) lemon juice
- 4-5 cloves garlic pressed or minced
- 2 tablespoon (30 ml) s dried italian seasoning I used my homemade blend, make sure yours has no added salt
- 1 teaspoon (5 ml) kosher salt
- 1/2 teaspoon (3 ml) freshly ground black pepper
Instructions
- Combine the ingredients for the marinade by whisking them together.
- Add the chicken to the marinade, ensuring it is completely covered.
- Let it marinate for a minimum of 15 minutes, or refrigerate for a longer period, even overnight if desired.
- When you’re prepared to cook, set the oven temperature to 425°F.
- Cover a baking tray with foil to make cleaning easier, then lay the chicken pieces on the tray without overlapping.
- Cook in the oven for 20-25 minutes, or until the chicken is thoroughly cooked.
