Ingredients

  • 3 large eggplant (680g), peeled and thinly sliced
  • 2 large eggs, beaten
  • 4 cups (960ml) Italian seasoned bread crumbs
  • 6 cups (1440ml) tomato sauce, divided
  • 1 (16 ounce (454 g)) package shredded beef cheese, divided
  • 1/2 cup (120ml) grated Parmesan cheese, divided
  • 1/2 teaspoon (3 ml) dried basil


Instructions

  1. Set your oven to heat at 350 degrees F (175 degrees C).
  2. Immerse the eggplant slices in the beaten eggs, followed by a coating of bread crumbs. Lay them out in a single layer on a baking tray.
  3. Place in the warmed oven and bake for 5 minutes. Turn the slices over and continue baking for another 5 minutes.
  4. On the bottom of a 9×13-inch baking dish, spread a light layer of tomato sauce; position a layer of eggplant slices on it. Add a sprinkle of shredded beef cheese and grated Parmesan cheese.
  5. Continue layering with the remaining sauce, eggplant, and cheeses, finishing with a top layer of cheese. Scatter dried basil over the top.
  6. Put in the preheated oven and bake until the top is golden brown, roughly 35 minutes.
  7. Serve while hot and enjoy your meal!
