Ingredients
- 3 large eggplant (680g), peeled and thinly sliced
- 2 large eggs, beaten
- 4 cups (960ml) Italian seasoned bread crumbs
- 6 cups (1440ml) tomato sauce, divided
- 1 (16 ounce (454 g)) package shredded beef cheese, divided
- 1/2 cup (120ml) grated Parmesan cheese, divided
- 1/2 teaspoon (3 ml) dried basil
Instructions
- Set your oven to heat at 350 degrees F (175 degrees C).
- Immerse the eggplant slices in the beaten eggs, followed by a coating of bread crumbs. Lay them out in a single layer on a baking tray.
- Place in the warmed oven and bake for 5 minutes. Turn the slices over and continue baking for another 5 minutes.
- On the bottom of a 9×13-inch baking dish, spread a light layer of tomato sauce; position a layer of eggplant slices on it. Add a sprinkle of shredded beef cheese and grated Parmesan cheese.
- Continue layering with the remaining sauce, eggplant, and cheeses, finishing with a top layer of cheese. Scatter dried basil over the top.
- Put in the preheated oven and bake until the top is golden brown, roughly 35 minutes.
- Serve while hot and enjoy your meal!
