Ingredients
- 3/4 Cup all-purpose flour (180g)
- 3/4 Cup white whole wheat flour (180g)
- 1/2 Cup brown sugar (100g)
- 2 teaspoons (10 ml) baking powder
- 1 teaspoon (5 ml) cinnamon
- 1/2 teaspoon (3 ml) nutmeg
- 1/4 teaspoon (1 ml) allspice
- 1/4 teaspoon (1 ml) salt
- 6 Tablespoons butter, cold and cut into pieces (85g)
- 1/2 Cup milk (the higher the fat content, the richer the flavor) (120ml)
- 1 egg
- 1 teaspoon (5 ml) vanilla extract
- 1 Cup (240 ml) chopped apple (about 1 medium apple)
- 1 Cup powdered sugar (confectioner’s sugar) (120g)
- 2 Tablespoons milk (a higher percentage of fat works the best) (30ml)
- 1 teaspoon (5 ml) vanilla extract
Instructions
- Set your oven to 400°F and prepare a baking tray with a silicone mat. Ensure the mat is broiler-safe; if not, you can skip it, though cleanup might be messier.
- In a mixing bowl, combine the all-purpose flour, white whole wheat flour, brown sugar, baking powder, cinnamon, nutmeg, allspice, and salt. Incorporate the butter by cutting it in until the texture is crumbly.
- In a separate bowl, beat together the milk, egg, and vanilla extract. Pour this mixture into the dry ingredients and mix until just unified. Gently fold in the chopped apple pieces.
- Spoon the batter onto the prepared tray using a 1/4 cup measurement. For smaller fritters, use a heaping tablespoon.
- Bake for 11-13 minutes, until the bottoms are golden and the centers are firm. For smaller fritters, check at 8 minutes for doneness. Transfer to a cooling rack and switch the oven to the broil setting.
- While the oven is preheating to broil, prepare the glaze by mixing confectioner’s sugar, milk, and vanilla extract until smooth. Lightly coat the fritters with the glaze.
- Place under the broiler for 2-4 minutes, or until the tops begin to brown and the glaze starts to bubble.
- Carefully transfer the baking tray back to the cooling rack. Apply the remaining glaze over the warm fritters.
- Let the glaze set and then serve. Best enjoyed on the same day.
