Description

A rich and creamy bacon cheddar gnocchi soup that warms the heart and soul.


Ingredients

  • 8-10 slices bacon, cooked and chopped
  • 1 tbsp butter or olive oil
  • 1 large onion, diced
  • 2 large carrots, peeled and sliced
  • 4 cups chicken broth
  • 1-2 tsp salt
  • 1 tsp black pepper
  • 1 tsp garlic powder (or 4 cloves minced garlic)
  • ¼ tsp dried thyme
  • ½-1 tsp red chili flakes (optional)
  • 16 oz gnocchi
  • 2 cups heavy cream or half-and-half
  • 2 cups shredded cheddar cheese (medium or sharp)


Instructions

  1. Cook the bacon until crispy, then chop it and set it aside.
  2. In the same pot, heat the butter or olive oil.
  3. Sauté the diced onions and sliced carrots until they become tender.
  4. Add the chicken broth and bring it to a simmer.
  5. Stir in the heavy cream and mix in the seasonings along with shredded cheese.
  6. Add the gnocchi to the pot and cook for 2 minutes.
  7. Finally, stir in the crispy bacon and adjust seasoning to taste.
  8. Serve hot, garnished with extra cheddar or fresh herbs if desired.

Notes

Optional: Add sautéed garlic for extra flavor and adjust red chili flakes based on heat preference.
