Description
A rich and creamy bacon cheddar gnocchi soup that warms the heart and soul.
Ingredients
- 8-10 slices bacon, cooked and chopped
- 1 tbsp butter or olive oil
- 1 large onion, diced
- 2 large carrots, peeled and sliced
- 4 cups chicken broth
- 1-2 tsp salt
- 1 tsp black pepper
- 1 tsp garlic powder (or 4 cloves minced garlic)
- ¼ tsp dried thyme
- ½-1 tsp red chili flakes (optional)
- 16 oz gnocchi
- 2 cups heavy cream or half-and-half
- 2 cups shredded cheddar cheese (medium or sharp)
Instructions
- Cook the bacon until crispy, then chop it and set it aside.
- In the same pot, heat the butter or olive oil.
- Sauté the diced onions and sliced carrots until they become tender.
- Add the chicken broth and bring it to a simmer.
- Stir in the heavy cream and mix in the seasonings along with shredded cheese.
- Add the gnocchi to the pot and cook for 2 minutes.
- Finally, stir in the crispy bacon and adjust seasoning to taste.
- Serve hot, garnished with extra cheddar or fresh herbs if desired.
Notes
Optional: Add sautéed garlic for extra flavor and adjust red chili flakes based on heat preference.
