Ingredients
- 2 eggs (2)
- 30 ml vinegar
- 2 slices bread
- 1 avocado
- a handful of greens (spinach/chard/arugula)
- salt and pepper
- a drizzle of balsamic reduction
Instructions
- Cover a medium non-stick pot with water, about 2 1/2 to 3 inches deep, and mix in 2 tablespoons of vinegar, then bring it to a vigorous boil.
- Crack open the eggs into separate small bowls or cups.
- Take the pot off the heat and gently slide the eggs into the water. To do this, tilt the edge of the bowl into the boiling water, allowing the water to flow into the bowl. Slightly shake the bowl so the hot water wraps around the egg, beginning the cooking process, then empty the egg into the pot. Cover the pot with the lid again.
- Set a timer for 3 to 4 minutes for eggs with soft yolks or 4 to 5 minutes for firmer yolks. Avoid lifting the lid during this time!
- As the eggs cook, toast the slices of bread.
- Mash the avocado and adjust the flavor with salt and pepper to your liking.
- Once done, use a slotted spoon to transfer the poached eggs onto a paper towel for brief draining. If they seem undercooked, leave them in the hot water for an additional minute or two, taking into account that altitude can influence cooking time, as water boils at a lower temperature at higher elevations.
- Layer the toasted bread with mashed avocado, a handful of greens, the poached egg, and a touch more of salt and pepper. If you wish, drizzle some balsamic reduction on top.
