Description

Ingredients

  • 2 slices of whole grain or gluten-free bread
  • 1 ripe avocado
  • 1 teaspoon lemon juice
  • 2 tablespoons crumbled feta cheese
  • ¼ cup cherry tomatoes, halved
  • 1 tablespoon balsamic reduction
  • Salt and pepper, to taste
  • Red pepper flakes, to taste


Instructions

  1. Toast the slices of bread until they reach your desired level of crispiness.
  2. While the bread toasts, cut the ripe avocado in half and remove the pit. Scoop the creamy flesh into a bowl.
  3. Add the lemon juice to the avocado and mash with a fork until smooth yet slightly chunky.
  4. Spread the mashed avocado generously over the toasted bread. Crumble the feta cheese on top, followed by the halved cherry tomatoes.
  5. Drizzle the balsamic reduction over the assembled toast and season with salt, pepper, and red pepper flakes to taste.
