Description

A nourishing breakfast featuring creamy avocado and perfectly poached eggs over crispy whole grain toast.


Ingredients

  • 1 ripe avocado
  • 1 lemon (juiced)
  • 2 eggs
  • 2 slices whole grain bread
  • Salt and pepper to taste
  • Red pepper flakes (optional)
  • Fresh herbs for garnish (optional)


Instructions

  1. Toast the whole grain bread until crispy.
  2. While the bread is toasting, bring a pot of water to a gentle simmer.
  3. Crack the eggs into individual cups and carefully slide them into the simmering water to poach for about 3-4 minutes.
  4. Mash the ripe avocado in a bowl, adding lemon juice, salt, and pepper to taste.
  5. Spread the mashed avocado evenly over the toasted bread.
  6. Once the eggs are poached, remove them from the water with a slotted spoon and place one egg on each slice of avocado toast.
