Ingredients
- 1 ripe avocado
- 1 lemon (juiced)
- 2 eggs
- 2 slices whole grain bread
- Salt and pepper to taste
- Red pepper flakes (optional)
- Fresh herbs for garnish (optional)
Instructions
- Toast the whole grain bread until crispy.
- While the bread is toasting, bring a pot of water to a gentle simmer.
- Crack the eggs into individual cups and carefully slide them into the simmering water to poach for about 3-4 minutes.
- Mash the ripe avocado in a bowl, adding lemon juice, salt, and pepper to taste.
- Spread the mashed avocado evenly over the toasted bread.
- Once the eggs are poached, remove them from the water with a slotted spoon and place one egg on each slice of avocado toast.
- Sprinkle with red pepper flakes and garnish with fresh herbs if desired.
- Serve immediately and enjoy!

For perfect poached eggs, add a splash of vinegar to the water and ensure the eggs are fresh. Adjust avocado texture to your preference, from creamy to chunky.
