Ingredients
- 1 lb Large Shrimp (21-25 count): Peeled and deveined
- 1 tbsp Olive Oil: Extra virgin for sautéing
- 2 Cloves Garlic: Minced
- 1/4 tsp Red Pepper Flakes: Optional
- Salt and Freshly Ground Black Pepper: To taste
- 2 Large Ripe Avocados: Diced
- 1/4 Cup Red Onion: Finely diced
- 1/2 Cup Cherry Tomatoes: Quartered or halved
- 1/4 Cup Fresh Cilantro: Chopped
- 2 tbsp Lime Juice: Freshly squeezed
- 1 Head Butter Lettuce (or Romaine/Iceberg): Leaves separated, washed, and dried
- Optional Garnish: Sesame Seeds, Sriracha Mayo, Extra Lime Wedges
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add minced garlic and cook for about 1 minute until fragrant.
- Add shrimp to the skillet, season with salt and pepper, and sprinkle red pepper flakes if desired.
- Sauté shrimp for 3-4 minutes until they turn pink and opaque. Do not overcook. Set aside.
- In a separate bowl, combine diced avocados, red onion, cherry tomatoes, cilantro, and freshly squeezed lime juice. Toss gently to combine, ensuring the avocado stays intact.
- Assemble the wraps by placing a generous spoonful of the avocado mixture on a lettuce leaf, followed by a few sautéed shrimp.
- Optional: Garnish with sesame seeds or a drizzle of Sriracha mayo for added flavor.
- Serve immediately, allowing everyone to create their own wraps.
