Description

Fresh and vibrant avocado & shrimp lettuce wraps that offer a delightful burst of flavor and texture, perfect for gatherings or family meals.


Ingredients

  • 1 lb Large Shrimp (21-25 count): Peeled and deveined
  • 1 tbsp Olive Oil: Extra virgin for sautéing
  • 2 Cloves Garlic: Minced
  • 1/4 tsp Red Pepper Flakes: Optional
  • Salt and Freshly Ground Black Pepper: To taste
  • 2 Large Ripe Avocados: Diced
  • 1/4 Cup Red Onion: Finely diced
  • 1/2 Cup Cherry Tomatoes: Quartered or halved
  • 1/4 Cup Fresh Cilantro: Chopped
  • 2 tbsp Lime Juice: Freshly squeezed
  • 1 Head Butter Lettuce (or Romaine/Iceberg): Leaves separated, washed, and dried
  • Optional Garnish: Sesame Seeds, Sriracha Mayo, Extra Lime Wedges


Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add minced garlic and cook for about 1 minute until fragrant.
  3. Add shrimp to the skillet, season with salt and pepper, and sprinkle red pepper flakes if desired.
  4. Sauté shrimp for 3-4 minutes until they turn pink and opaque. Do not overcook. Set aside.
  5. In a separate bowl, combine diced avocados, red onion, cherry tomatoes, cilantro, and freshly squeezed lime juice. Toss gently to combine, ensuring the avocado stays intact.
  6. Assemble the wraps by placing a generous spoonful of the avocado mixture on a lettuce leaf, followed by a few sautéed shrimp.
  7. Optional: Garnish with sesame seeds or a drizzle of Sriracha mayo for added flavor.
  8. Serve immediately, allowing everyone to create their own wraps.
