Description

A refreshing avocado salad combining ripe avocados, crisp cucumbers, and juicy tomatoes for a vibrant and healthy dish.


Ingredients

  • 2 ripe avocados, diced
  • 1 medium cucumber, chopped
  • 1 pound tomatoes, chopped
  • ½ red onion, finely sliced
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons lemon juice (or balsamic vinegar)
  • 3 tablespoons parsley, chopped
  • 1 teaspoon salt
  • ¼ teaspoon black pepper


Instructions

  1. Thinly slice ½ red onion, then pinch it with your fingers to separate the layers. Soak the onion in cold water for ten minutes to soften its flavor.
  2. In a mixing bowl, add 1 pound of chopped tomatoes, 1 medium chopped cucumber, and 2 diced ripe avocados along with the soaked onion and 3 tablespoons of chopped parsley.
  3. Season the mixture with 2 tablespoons of extra virgin olive oil, 2 tablespoons of lemon juice (or balsamic vinegar), 1 teaspoon of salt, and ¼ teaspoon of black pepper.
  4. Gently toss the salad until it becomes coated in the condiments and achieves a slightly creamy texture from the avocado. Taste, and adjust the salt if necessary before serving.

Notes

Allow the salad to sit for a few minutes after mixing to enhance the flavor.
