A simple yet satisfying breakfast featuring avocado halves filled with baked eggs, crispy bacon, and melted cheese.
Ingredients
- 1 ripe avocado
- 2 eggs
- 2 tbsp cooked bacon, chopped
- 2 tbsp shredded cheese
- Salt and pepper to taste
Instructions
- Preheat oven to 425°F (220°C).
- Cut the avocado in half and remove the pit.
- Using a spoon, scoop out some of the avocado so an egg will fit in it.
- Crack one egg into each side of your avocado.
- Top with salt, pepper, bacon, and cheese.
- Cook for about 15 minutes or until cheese is bubbling and slightly browned.
Notes
For added richness, you can mix cream or milk into the eggs before cracking them. Experiment with different cheeses for varied flavors.
