Description

A delicious and fluffy Mexican rice recipe infused with vibrant flavors, perfect as a side dish for any meal.


Ingredients

  • 1 cup long grain rice (rinsed well and set aside to drain)
  • 1 tablespoon oil
  • 2 Roma tomatoes (cut in half)
  • ¼ medium white onion
  • 2 whole garlic cloves
  • ¼ cup chicken or vegetable broth (or use chicken bouillon and water)
  • ¼ teaspoon salt


Instructions

  1. Rinse the long grain rice in a fine mesh strainer under cold water for about 30 seconds. Allow it to drain.
  2. In a blender, combine tomatoes, onion, garlic, chicken bouillon (if using), and broth or water. Blend until smooth, achieving 1.5 cups of liquid.
  3. In a pot, heat oil over medium heat, add the drained rice, and toast until lightly brown.
  4. Carefully pour in the blended sauce, stir well, and reduce heat to medium-low to simmer.
  5. Cover and let the rice simmer for 12 minutes.
  6. Remove from heat and let sit for 10 minutes with the lid on.
  7. Fluff the rice with a fork before serving.

Notes

Serve garnished with fresh herbs like cilantro or parsley. Pairs well with grilled meats or vegetables.
