Description

Experience the rich flavors of authentic birria tacos, made with tender beef chuck roast, aromatic spices, and served with a delicious dipping broth.


Ingredients

  • 2 lbs beef chuck roast
  • 4 dried guajillo chiles
  • 3 dried pasilla chiles
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 2 cups beef broth
  • 1 tablespoon ground cumin
  • 1 tablespoon dried oregano
  • Salt and pepper to taste
  • Corn tortillas
  • Chopped cilantro and onions for garnish


Instructions

  1. Toast the guajillo and pasilla chiles in a dry skillet until fragrant, then soak them in hot water for 15 minutes.
  2. Combine soaked chiles, onion, garlic, cumin, oregano, and a cup of beef broth in a blender; blend until smooth.
  3. Season the beef with salt and pepper in a large pot, add the blended sauce, and the remaining broth.
  4. Cover and simmer on low heat for 3 hours until the beef is tender, or cook in a slow cooker on low for 6-8 hours.
  5. Shred the beef and serve in warmed corn tortillas, topped with chopped cilantro and onions.
  6. Serve with the broth (consommé) for dipping.

Notes

For enhanced flavor, consider adding spices like bay leaves or smoked paprika. Ensure the beef is shredded while hot for easier handling.
