Experience the rich flavors of authentic birria tacos, made with tender beef chuck roast, aromatic spices, and served with a delicious dipping broth.
Ingredients
- 2 lbs beef chuck roast
- 4 dried guajillo chiles
- 3 dried pasilla chiles
- 1 onion, chopped
- 4 cloves garlic, minced
- 2 cups beef broth
- 1 tablespoon ground cumin
- 1 tablespoon dried oregano
- Salt and pepper to taste
- Corn tortillas
- Chopped cilantro and onions for garnish
Instructions
- Toast the guajillo and pasilla chiles in a dry skillet until fragrant, then soak them in hot water for 15 minutes.
- Combine soaked chiles, onion, garlic, cumin, oregano, and a cup of beef broth in a blender; blend until smooth.
- Season the beef with salt and pepper in a large pot, add the blended sauce, and the remaining broth.
- Cover and simmer on low heat for 3 hours until the beef is tender, or cook in a slow cooker on low for 6-8 hours.
- Shred the beef and serve in warmed corn tortillas, topped with chopped cilantro and onions.
- Serve with the broth (consommé) for dipping.

For enhanced flavor, consider adding spices like bay leaves or smoked paprika. Ensure the beef is shredded while hot for easier handling.
