Description

A delightful stir fry combining tender beef and fresh vegetables, tossed in a sweet ginger sauce for a quick, satisfying meal.


Ingredients

  • 1 lb (450g) lean beef (flank steak or sirloin), thinly sliced against the grain
  • 2 tablespoons vegetable oil (or sesame oil for an added flavor boost)
  • 1 medium onion, thinly sliced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 medium carrot, julienned
  • 1 zucchini, sliced
  • 1 cup snap peas or green beans, trimmed
  • 2 cloves garlic, minced
  • 2 tablespoons fresh ginger, grated
  • Salt and pepper, to taste
  • 3 tablespoons soy sauce (use low-sodium if preferred)
  • 2 tablespoons honey or brown sugar
  • 1 tablespoon rice vinegar (or apple cider vinegar)
  • 1 tablespoon sesame oil
  • 1 teaspoon cornstarch
  • 1/4 cup water
  • 1/2 teaspoon chili flakes (optional)
  • Chopped green onions (for garnish)
  • Toasted sesame seeds (for garnish)


Instructions

  1. Prepare the beef and vegetables: Thinly slice the beef against the grain and set aside. Wash and slice all vegetables as described.
  2. Make the Sweet Ginger Sauce: In a small bowl, combine soy sauce, honey or brown sugar, rice vinegar, sesame oil, cornstarch, and water. Mix well and set aside.
  3. Cook the Beef: Heat 2 tablespoons of vegetable oil (or sesame oil) in a large skillet or wok over high heat. Add the sliced beef and season with salt and pepper. Stir-fry until browned and cooked through, about 3-4 minutes. Remove and set aside.
  4. Cook the Vegetables: In the same skillet, add more oil if needed. Toss in onion, bell peppers, carrot, zucchini, and snap peas. Stir-fry for 4-5 minutes until tender-crisp. Add minced garlic and grated ginger last minute.
  5. Combine Beef and Vegetables with Sauce: Return beef to skillet, pour the sauce over and stir to combine. Cook for an additional minute until sauce thickens slightly.
  6. Garnish and Serve: Remove from heat, garnish with green onions and sesame seeds. Serve immediately over rice or noodles.
