Ingredients
- 2 1/2 cups (300g) all-purpose flour
- 2 cups (400g) white sugar

- 2 eggs, lightly beaten
- 1 cup (240 ml) canned pumpkin puree
- 1/2 cup (120 ml) vegetable oil
- 2 cups (480 ml) peeled, cored and chopped apple
- 2 tablespoons (30 ml) all-purpose flour
- 1/4 cup (50g) white sugar
- 1/2 teaspoon (3 ml) ground cinnamon
- 4 teaspoons (20 ml) butter
Instructions
- Set your oven to 350 degrees F (175 degrees C) and allow it to warm up. Prepare 18 muffin tins by either greasing them lightly or placing paper liners inside.
- In a spacious mixing bowl, combine the all-purpose flour, sugar, pumpkin pie spice, baking soda, and salt by sifting them together. In a separate container, blend the eggs, pumpkin puree, and vegetable oil. Merge the pumpkin mixture with the dry ingredients, stirring only until the dry ingredients are dampened. Gently incorporate the chopped apples into the batter.
- In a small bowl, mix the flour with sugar and cinnamon. Incorporate the butter until the mix forms coarse crumbs. Distribute this crumbly topping evenly over the muffin batter in the tins.
- Place the muffins in the warmed oven and bake for 35 to 40 minutes, or until a toothpick inserted into the center of a muffin exits cleanly.
