Ingredients

  • 5 medium apples peeled, cored, and chopped into 1/4-inch cubes (1250 g)
  • 1/3 cup brown sugar packed (67 g)
  • 2 tablespoons cane sugar (25 g)
  • 2 teaspoons ground cinnamon (4.2 g)
  • 1 teaspoon fresh lemon juice (5 ml)
  • 1 cup water (240 ml)
  • 2 tablespoons cornstarch (16 g)
  • 8 flour tortillas 6-inch (20 cm)
  • 1/3 cup cane sugar (67 g)
  • 1 1/2 teaspoons ground cinnamon (3.2 g)
  • Vegetable oil cooking spray


Instructions

  1. Mix the chopped apples, packed brown sugar, cane sugar, cinnamon, and lemon juice in a medium-sized bowl.
  2. Transfer the apple mixture to a large skillet or saucepan, add the water, and bring it to a boil, then cover and lower the heat to medium-low.
  3. Cook gently until the apples become soft, which should take around 10 minutes.
  4. Take out ½ cup of the liquid from the pan, mix it with the cornstarch until smooth.
  5. Return the cornstarch mixture to the pan with the apples, stirring thoroughly to combine. Continue cooking until the mixture thickens.
  6. Once you reach your preferred consistency, remove the pan from the heat. You can serve it warm or cold.
  7. Set your oven to preheat at 350°F.
  8. In a small bowl, combine the cane sugar and cinnamon by whisking them together.
  9. Coat both sides of each tortilla with non-stick cooking spray or brush with melted butter, then sprinkle the cinnamon sugar mixture on each side.
  10. Slice each tortilla into 8 pieces and arrange them in a single layer on a baking sheet, baking in two rounds if necessary.
  11. Bake for 9-12 minutes until the chips are crisp and golden brown.
  12. Allow the chips to cool on wire racks and serve them at room temperature.
