Ingredients

  • 1/3 cup (80 ml) unsweetened plain plant-based yogurt
  • 3 tbsp (45 ml) apple butter
  • 1 medjool date
  • 1 tsp (5 ml) yellow miso paste, optional
  • 1 tsp (5 ml) vanilla extract
  • 1 tsp (5 ml) cinnamon
  • 1/4 tsp (1.25 ml) cardamom
  • 1/4 tsp (1.25 ml) salt or more to taste
  • 3/4 cup (180 ml) soy milk
  • 1/3 cup (80 ml) chia seeds
  • 3 tbsp (45 ml) gluten-free rolled oats
  • 3 tbsp (45 ml) walnuts or pecans
  • 2 medjool dates
  • 2 apples, diced or thinly sliced
  • 2 tsp (10 ml) maple syrup
  • 1/4 tsp (1.25 ml) cinnamon


Instructions

  1. Place the yogurt, apple butter, a single date, miso, vanilla, cinnamon, cardamom, salt, and soy milk into a blender. Blend on high speed until the mixture is completely smooth.
  2. Transfer the chia seeds into a bowl or storage container and pour the blended mixture over them. Mix thoroughly and allow it to sit for five minutes. Stir the mixture well again to ensure even distribution and break up any clumps, then cover and refrigerate for at least one hour.
  3. In a small food processor, combine the oats, walnuts, the remaining dates, and a pinch of salt. Pulse until you achieve a crumbly texture to your liking.
  4. For the apple topping, heat a sauté pan over medium-low heat. Once warmed, add the apples, maple syrup, cinnamon, a quarter cup of water, and a pinch of salt. Stir thoroughly to mix, and continue to sauté for 3 to 4 minutes. If needed, add small amounts of water while stirring until the apples become tender and most of the liquid has evaporated.
  5. To assemble, divide the chia mixture into three jars. Evenly distribute the cooked apples among the jars, then sprinkle with the crumble to your preference (approximately 2 tablespoons for reference). Optionally, you can add a spoonful of additional apple butter and drizzle maple syrup over the top before serving.

  • For a richer consistency, opt for full-fat plant-based yogurt instead of unsweetened plain.
