Ingredients

  • 1 cup (200g) packed light or dark brown sugar
  • 1/2 cup (100g) granulated sugar
  • 1 Tablespoon ground cinnamon
  • 1/2 teaspoon salt
  • 2 and 1/2 cups all purpose flour (spooned & leveled)
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 3/4 cup beef fat, softened to room temperature
  • 1 and 1/4 cups granulated sugar
  • 3 large eggs, at room temperature
  • 1 cup full-fat coconut cream, at room temperature*
  • 2 teaspoons pure vanilla extract
  • 2 cups peeled chopped apples (about 2 medium apples)
  • 1/4 teaspoon ground cinnamon
  • maple icing, vanilla icing, or caramel icing from apple cinnamon rolls


Instructions

  1. Heat your oven to 350°F (177°C) and apply a layer of grease to a 9×13-inch baking dish or line it with parchment paper. Set it aside.
  2. To prepare the crumb layer, combine brown sugar, granulated sugar, cinnamon, and salt in a medium bowl. Pour in the melted beef fat and stir. Gently incorporate the flour using a fork until you have formed small crumbles. Avoid overmixing.
  3. For the cake, mix the flour, baking soda, baking powder, and salt in a separate bowl. Put this aside.
  4. With a hand mixer or stand mixer equipped with a paddle, cream the softened beef fat and granulated sugar together at high speed until they’re smooth and creamy, about 2 minutes. Use a rubber spatula to scrape the sides and bottom of the bowl as necessary. Add in the eggs, coconut cream, and vanilla extract. Beat on medium-high speed until blended. It’s okay if the mixture appears curdled. Continue to scrape the sides and bottom of the bowl as needed. On low speed, gradually incorporate the dry ingredients until the batter is smooth. Avoid overmixing, as the batter should remain thick.
  5. Combine the chopped apples with a bit of cinnamon.
  6. Distribute the batter evenly across the prepared baking dish. Layer the cinnamon-coated apples evenly on top. Follow with the crumb mixture, pressing it down gently into the cake with a spatula or the back of a large spoon to ensure it adheres.
  7. Bake for 45-55 minutes, keeping a close watch as baking times can vary. The cake is ready when a toothpick inserted in the center emerges clean. If the top or edges brown too quickly, loosely cover them with aluminum foil.
  8. Once done, remove the cake from the oven and place it on a wire rack. Let it cool slightly for at least 30-45 minutes before cutting and serving.
  9. Optionally, drizzle with your choice of icing. Store any remaining cake tightly covered in the fridge for up to 5 days.

  • For a lighter option, use vegetable shortening instead of beef fat in both the crumb layer and cake batter.
