Ingredients

  • – 340g (12 oz) fresh cranberries
  • – 180ml (3/4 cup) apple cider vinegar
  • – 60ml (1/4 cup) water
  • – 1 orange, zested and juiced
  • – 135g (2/3 cup) brown sugar
  • – 1 teaspoon (5 ml) fresh ginger, minced
  • – 1 teaspoon (5 ml) cinnamon
  • – 1/4 teaspoon (1 ml) cloves
  • – 1/4 teaspoon (1 ml) allspice
  • – 1/2 teaspoon (3 ml) salt


Instructions

  1. Place the cranberries, apple cider vinegar, water, orange zest and juice, brown sugar, ginger, cinnamon, cloves, allspice, and salt in a medium-sized saucepan. Stir occasionally and bring the mixture to a rolling boil.
  2. Lower the heat to medium-low and let it simmer for 5-7 minutes, until the cranberries begin to soften and burst.
  3. Take the saucepan off the stove and allow the cranberries to rest for 10 minutes.
  4. Transfer the cranberries into a quart-sized jar, leaving a little space at the top.
  5. Seal the jar with a lid and allow it to come down to room temperature before placing it in the refrigerator. For the best flavor, wait 2-3 days before enjoying. These pickled cranberries can be stored in the fridge for 1-2 months or even longer.
