Description

A rich and creamy dessert that captures the flavors of autumn with apple cider and warm spices.


Ingredients

  • 1½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 3 cups cream cheese, softened
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1 cup reduced fresh apple cider
  • 1 cup sour cream
  • 1 teaspoon cinnamon
  • ¼ teaspoon nutmeg


Instructions

  1. Preheat the oven to 325°F (160°C).
  2. Mix graham cracker crumbs with melted butter until well combined. Press the mixture into the bottom of a 9-inch springform pan.
  3. Beat the cream cheese with sugar and vanilla until smooth in a large mixing bowl.
  4. Add eggs one at a time, mixing well after each addition.
  5. Mix in the reduced fresh apple cider, sour cream, cinnamon, and nutmeg until fully combined.
  6. Pour the cheesecake filling over the crust in the springform pan.
  7. Bake in the preheated oven for 50–60 minutes or until the center is set.
  8. Let the cheesecake cool completely before refrigerating for at least 4 hours.
  9. Serve chilled and enjoy the fall flavors!

Notes

For best flavor, use fresh, reduced apple cider. Cool the cheesecake gradually to prevent cracks.
