A rich and creamy dessert that captures the flavors of autumn with apple cider and warm spices.
Ingredients
- 1½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- 3 cups cream cheese, softened
- 1 cup sugar
- 1 teaspoon vanilla extract
- 3 large eggs
- 1 cup reduced fresh apple cider
- 1 cup sour cream
- 1 teaspoon cinnamon
- ¼ teaspoon nutmeg
Instructions
- Preheat the oven to 325°F (160°C).
- Mix graham cracker crumbs with melted butter until well combined. Press the mixture into the bottom of a 9-inch springform pan.
- Beat the cream cheese with sugar and vanilla until smooth in a large mixing bowl.
- Add eggs one at a time, mixing well after each addition.
- Mix in the reduced fresh apple cider, sour cream, cinnamon, and nutmeg until fully combined.
- Pour the cheesecake filling over the crust in the springform pan.
- Bake in the preheated oven for 50–60 minutes or until the center is set.
- Let the cheesecake cool completely before refrigerating for at least 4 hours.
- Serve chilled and enjoy the fall flavors!
Notes
For best flavor, use fresh, reduced apple cider. Cool the cheesecake gradually to prevent cracks.
