Ingredients
- 1 pound chicken breast
- 6 cups chicken broth
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 carrots, sliced
- 2 celery stalks, chopped
- 1 cup mushrooms, sliced
- 1 teaspoon turmeric
- 1 teaspoon ginger
- Salt and pepper to taste
- Olive oil for sautéing
- Fresh parsley for garnish
Instructions
- Gather all ingredients and chop the onion, garlic, celery, and carrots.
- Heat olive oil in a large pot over medium heat.
- Add chopped onion and sauté until translucent.
- Stir in minced garlic, sliced carrots, chopped celery, and sliced mushrooms; cook for about 5 minutes.
- Pour in chicken broth, add turmeric and ginger, and bring to a boil.
- Add the chicken breast and reduce heat to a simmer; cook for approximately 20 minutes.
- Remove the chicken, shred it, and return it to the pot.
- Season with salt and pepper to taste. Let sit for a few minutes before serving.
- Garnish with fresh parsley before serving.
