  • 160ml (2/3 cup) white granulated sugar
  • 60ml (1/4 cup) vegetable oil

  • 2 tsp (10 ml) vanilla extract
  • 125g (1 cup) all-purpose flour
  • 1 tsp (5 ml) baking soda
  • 1/2 tsp (3 ml) kosher salt
  • 120g (1 cup) powdered sugar, sifted
  • 1 tsp (5 ml) vanilla extract
  • 45ml (3 tbsp) milk


Instructions

  1. Heat your oven to 350°F and prepare a loaf pan by coating it with a nonstick spray or cake release.
  2. Combine the peeled and chopped apples with light brown sugar, cinnamon, and ginger in a medium bowl, then set this mixture aside.
  3. In a large bowl, blend the egg, white sugar, vegetable oil, yogurt, and vanilla extract thoroughly using a whisk.
  4. In another bowl, combine the all-purpose flour, baking soda, and kosher salt. Gradually incorporate this dry mixture into the wet ingredients, stirring gently with a spatula or wooden spoon until nearly mixed.
  5. Add about three-quarters of the apple-cinnamon mixture into the batter, gently folding it in, and then transfer the batter into the prepared loaf pan.
  6. Scatter the remaining apple mixture on top of the batter and bake for 50 to 55 minutes, or until the bread reaches an internal temperature of 200°F.
