- 1/2 tsp (3 ml) kosher salt
- 120g (1 cup) powdered sugar, sifted
- 1 tsp (5 ml) vanilla extract
- 45ml (3 tbsp) milk
Instructions
- Heat your oven to 350°F and prepare a loaf pan by coating it with a nonstick spray or cake release.
- Combine the peeled and chopped apples with light brown sugar, cinnamon, and ginger in a medium bowl, then set this mixture aside.
- In a large bowl, blend the egg, white sugar, vegetable oil, yogurt, and vanilla extract thoroughly using a whisk.
- In another bowl, combine the all-purpose flour, baking soda, and kosher salt. Gradually incorporate this dry mixture into the wet ingredients, stirring gently with a spatula or wooden spoon until nearly mixed.
- Add about three-quarters of the apple-cinnamon mixture into the batter, gently folding it in, and then transfer the batter into the prepared loaf pan.
