Description

A simple yet flavorful dish featuring ground beef, enchilada sauce, and cheese wrapped in flour tortillas, perfect for a cozy family dinner.

Ingredients

  • 1 lb ground beef
  • 1 can (10 oz) enchilada sauce
  • 8 small flour tortillas
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1/2 cup diced onions

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook the ground beef and diced onions in a skillet over medium heat until the beef is browned. Drain excess fat.
  3. Stir in half of the enchilada sauce.
  4. Place a few tablespoons of the beef mixture into each tortilla, sprinkle with cheese, and roll tightly.
  5. Arrange the rolled tortillas seam-side down in a baking dish and pour the remaining enchilada sauce over the top.
  6. Sprinkle with the remaining cheese.
  7. Bake for 20 minutes or until the cheese is melted and bubbly.
  8. Serve hot.

Notes

Consider warming the tortillas before filling for easier rolling. Customize with spices or different cheese blends for added flavor.
