Description
A healthier version of chocolate banana bread that combines the sweet taste of ripe bananas and rich chocolate flavor, all while keeping the calorie count in check.
Ingredients
- 2 large very ripe bananas
- 1 large egg
- 75 g full-fat yogurt
- 85 g stevia or granulated sweetener
- 1 tsp vanilla extract
- 100 g self-raising flour
- 50 g unsweetened cocoa powder
- 1 tsp baking powder
- ½ tsp ground cinnamon
- 30 g chocolate chips
Instructions
- Mash the bananas in a medium bowl until smooth or with very few lumps remaining.
- Add the egg, full-fat yogurt, vanilla extract, and stevia; whisk until combined.
- Gently fold in the self-raising flour, cocoa powder, baking powder, and ground cinnamon until the batter is smooth.
- Fold in the chocolate chips.
- Transfer the batter to the lined loaf tin and bake in a preheated oven at 180°C (356°F) for 45-55 minutes.
- To check for doneness, insert a knife into the center; it should come out with very few crumbs.
- Allow the banana bread to cool in the tin for about 10 minutes before gently removing it.
Notes
Use overly ripe bananas for maximum sweetness. Avoid overmixing the batter for a tender loaf.
